After spreading the grapes under the sun for 10-12 days, the fermentation follows by the method of cold extraction in a stainless steel tank.
Matures for 8 months, in naturally moist and cold cellar in oak barrels.
Pairing with local Chian dishes such as goat and rooster in wine red sauce with hand-made spaghetti and shepherd's cheese. Also as a dessert wine in pairing with dark chocolate.
16ο – 18ο C for pairing with a meal or colder as a dessert.
Semi-sweet-semi-dry, with full body and silky texture. Intense aroma due to drying the fruit under the sun in combination with the taste of the spices.
