RED WINES

 

«Ariousios Afstiros», red dry wine, 750 ml

 

Varieties:

The unique local varieties Chiotiko krassero and Ayannitis, which used to be cultivated in Chios since ancient times are offering nowadays too, this excellent red wine.

Altitude: from 250 to 350 meters

Harvest: Chiotiko krassero from 20 to 30 September – Agiannitis from 20 to 30 August

Yield per 1000 sq.m.:

Up to 800 kg

Winemaking:

Fermentation controlled temperature process is used for the production of this red wine, collecting premium quality grapes of composing varieties.

Aging:

Aged for 18 months in a cellar with natural humidity and cold, so as to highlight the peculiarities of fragrance and color of the varieties, combined with the aromas of French oak barrels.

Matching foods:

«Ariousios Afstiros» is suggested to accompany meats with red sauces, also pasta with spicy sauces and lobster or gourmet seafood as well.

Preservation:

«Ariousios Afstiros» the more aged, the more matures. Its characteristics are mostly developed after two years in the bottle. It is better to be served about half an hour left in the fridge and in jar with an open mouth.

Tasting:

The local Chian varieties Chiotiko Krassero and Ayanittis offer a charming red colour, flavours of red fruits and vanilla for a rich and balanced taste.

 

«Ariousios Glikazon», red semisweet, 750 ml

 

Varieties:

This semi-sweet wine is produced from the local variety Chiotiko krassero, grown on the slopes of the Amani Mountains at the NW part of Chios Island.

From 250 to 350 meters

Harvest:

Chiotiko krassero from 20 to 30 September

Yield per 1000 sq.m.:

Up to 800 kg

Winemaking:

Keeping the tradition of the famous «Kourouniotiκο wine», excellent quality grapes are spread in sunlight, so as to achieve a natural sweetener. It is fermented at controlled low temperature.

Aging:

The maturation in oak barrels in the cellar of Ariousios, in natural wet and cold environment, enables this special sweet wine to be aged in the bottle for several years.

Matching foods:

While on the island is quite customary to accompany meals, because it is our traditional wine, this is a wine that can be served as an aperitif or as an accompaniment to desserts (especially chocolate desserts). However, diners who have tried it, recommend it to accompany meat or poultry with red sauces (e.g. stew, rooster cooked in wine) and even a plate with ripe yellow cheeses and meats.

Preservation:

«Ariousios Glikazon» is a wine maturing and ripping more while left in the bottle in a cool and shady environment. It reveals rich aromas when served cool and not cold.

Tasting:

The combination of the sunshine and the breeze of the Aegean Sea give excellent results, as the grapes are spread to dry under the sun. Red color with brick reflections, aromas of dried fig and plum, raisin and vanilla, rich mouth with beautiful balance between sweet and acidity and a long aftertaste.

 

WHITE WINES

 

«Ariousia Chora», white dry wine, 750ml

 

Varieties:
This white wine is produced from a fine blend of the Aegean Sea’s varieties Assyrtiko and Athiri.

Altitude:

From 250 to 350 meters

Harvest:

1st 10 days of September

Yield per 1000 sq.m.:

Up to 800 kg

Winemaking:
Excellent wine production from grapes grown on the slopes of Mount Amani with the method of low-temperature controlled.

Matching foods:

«Ariousia Chora» is an appropriate wine to accompany pasta with white sauce and herbs, fish and salads or variety of a light buffet.

Preservation:

The whitish color and raciness in the aroma of this wine emerge best when served and preserved at a temperature of about 12 degrees Celsius.

Tasting:

Yellow color indicates freshness and excellent wine production, with intense aromas of white fruit and green apple and lime, thanks to varieties Athiri and Assyrtiko, from which it is produced.
The pleasant acidity in flavor gives nerve and personality to this wine, which also has a strong body, also a characteristic of the variety Assyrtiko.

 

«Greek Islands», dry white wine, 750ml

 

Varieties:
This dry white wine is produced from the exceptional Aegean Sea’s variety Assyrtiko, which is meant to be the most famous white grape variety of Greece by now!

«Greek Islands» is an appropriate wine to be served with a variety of seafood, grilled fish, salads or variety of a light buffet.

Preservation:

The whitish color and raciness in the aroma of this wine emerge best when served and preserved at a temperature of about 10-12 degrees Celsius.

Tasting:

«Greek Islands» is a food-friendly dry white wine with clear, pale yellow color and citrus flowers and mineral flavours. Crispy acidity, intensity and complex aromas of lemon blossom on aftertaste.

 

ROSE WINES

 

«Ariousios Rose»,dry rosé wine,750ml

 

Varieties:

"Ariousios Rosé" wine is produced by Moschato Hamburg and the local red variety Agiannitis.

Altitude:

From 250 to 350 meters

Harvest:

Agiannitis from 20 to 30 August, Muscat Hamburg in September.

Yield per 1000 sq.m.:

Up to 800 kg

Vinification:

Sorting grapes of first quality, fermentation is done by the method of cold extraction.

Matching foods:

It is a perfect wine to pair with Mediterranean food, fish and seafood, pasta and risotto, but also an excellent dessert.

Preservation:

It is kept - like all the wines - in a cool and shady place. Before serving it, keep it in the refrigerator and not in the freezer.

Served at 10-12 ° C.

Tasting:

It is fresh and light with flavor of aromatic plants. It has bright colour, balance in acidity and durability in aftertaste.

«Chios Vita», dry red wine, 750ml

 

Varieties:

Agiannitis and Avgoustiatis

Rare red Aegean varieties of limited cultivation by a few wine producers, but with impressive high quality results.

Altitude:

250 - 350 meters

Harvest:

From August 20 tov30

Yield per 1000 sq.m.:

Up to 800 kg

Vinification:

The fermentation is done in tanks by by the method of cold extraction.

Aging:

It matures and "softens" in oak barrels in the natural wet and cold cellar of Ariousios Winery, and continues to age in the bottle until its opened.

Matching foods:

Red meat, hunting, but also pasta and yellow cheeses are an excellent choice for pairing with the taste of Chios Vita.

Preservation:

Keeping in a shady and cool place until the bottle is opened, protects it and allows it to emerge as the years go by. It is better to let it rest for a while and then serve it.

Tasting:

These rare varieties give a completely velvety and soft texture to this wine. Its colour is bright red and the flavour of the wild herbs of our region.

 

 

«Oenanthes», red dry wine

 

Varietal wine, produced from the Syrah variety, with soft acidity and a pleasant aftertaste. Its clear red colour and flavour brings out the scenery of the Greek countryside. It is served at 18o C.

 

«Oenanthes», red semi-sweet wine

 

Semi sweet red wine produced from the well known Syrah variety.

It is full of flavour and has a smooth finish. Deep red colour, with aromas of red fruit and spices, Served at 18o Celsius.

 

 

WHITE WINES

 

«Oenanthes», white dry wine, 750ml

 

Varietal wine, produced from the variety Athiri, cultivated in the islands of the Aegean Sea.

Its distinctive yellow-green colour indicates youth and freshness.  Flavours of fruits with scents of white flowers are distinctive. It has a refreshing and balanced taste.

NATURAL RED WINES

 

«Chiotiko», Natural Dry Red, 750ml

 

Variety

Chiotiko Krassero is the only native variety that, since antiquity, was giving the fabled "Ariousios Wine", for which Chios was famous throughout the then known world.

Altitude:

From 250 to 350 meters

Harvest:

From 20 to 30 September - from vineyards 30 to 40 years old. The vintage is done manually, using 18kg crates.

Cultivation:

Organic fertilizer (dagger) is used and spraying is done with sulphur and copper four times a year. The vineyards are not watered.

Yield per acre:

700 - 800 kg

Vinification:

For the vininfication of this natural red dry wine the grapes at first are sun dried for about a week. The fermentation is done with the marc remaining in the tank for about twenty days. Then is the pressing up to 0.5 bars. No oenological material (e.g. enzymes, yeasts) is added during fermentation, while the cooling and filtration processes are not applied during stabilization.

Aging:

It matures for 18 months, in a naturally moist and cold cellar, in oak barrels of about 6 years of age.

Pairing with food:

It is suggested to pair with meats with red sauces, but also pasta with spicy sauces.

Preservation:

The variety "Chiotiko Krasero" the more is getting older, the more it matures. It should be kept in a humid and cold place, protected from light and high temperature.

Tasting:

Its colour is deep purple while its flavour is enhanced if the wine is aerated for twenty minutes before serving. The wild herbs of the mountain Amani, where the variety is grown, red fruits (cherry) and vanilla are the flavours that can be discovered.

 

NATURAL WHITE WINES

 

"Assyrtiko", natural dry white, 750ml

 

Variety:

Wine produced by the excellent white Assyrtiko variety, which is grown in the mountainous areas of Chios.

Altitude:

250 - 350 meters

Harvest:

During fist 10 days of September

Yield per acre:

700 - 800 kg

Cultivation:

It is a cosmopolitan wine with a colour that touches the orange. The smell of honey and the wild white flowers of mountainous Chios Island are distinct, while the distinctive acidity of the Assyrtiko variety enhances its personality.
